Barbecue Meatball Tortillas with Blue Cheese Dressing

Have you ever wanted to try something new with your favorite meatball recipe? Are you sick of meatballs and rice. Or meatballs and mashed potatoes? Well I was, so I created this delicious recipe for barbecue meatball tortillas with blue cheese dressing. They are topped with quick pickled red onions, purple cabbage, green onions and cilantro. Which results in the perfect balance of sweet, sour and salty.

For this recipe, I used my easy barbecue meatballs that are cooked in the slow cooker. But you can use your favorite barbecue meatball recipe. Just ensure that it is not tomato sauce based, as this will not result in the same delicious meatball tortilla. The meatball recipe that I use is super simple. All you need is some premade meatballs, concord grape jelly, barbecue sauce and apple cider vinegar. You add all of the ingredients in your slow cooker then let the slow cooker do all of the work. This makes for a super easy and quick meal prep for those days when you have work, school or other commitments.

Not only are the meatballs super easy to make, but the other ingredients are easy to prepare as well. They can even all be prepared beforehand. So these barbecue meatball tortillas will come together very quick.

Barbecue Meatball Tortillas

  • 1 recipe Barbecue Meatballs (see above for a link to easy slow cooker barbecue meatballs)

Quick Pickled Red Onions

  • 1 cup Water
  • ½ cup Apple Cider Vinegar
  • 1 medium Red Onion, sliced thin
  • 1 clove Garlic, smashed
  • 2 Tbsp Sugar
  • tsp Table Salt

Tortilla Ingredients

  • 12 small Tortillas
  • 1-2 cups Purple Cabbage, sliced thin
  • ½ cup Green Onions, sliced
  • ¼ cup Cilantro
  • Blue Cheese Dressing



  • Prepare your favorite barbecue meatball recipe.

Quick Pickled Red Onions

  • Add all ingredients in a small saucepan.
  • Bring to a boil over medium heat.
  • Once boiling, remove from heat and cover.
  • Sit and let come to room temperature.
  • Place in a glass container and put in the fridge until ready to use.


  • Place the meatballs in the tortilla and add the desired amount of cabbage, green onions, cilantro and blue cheese dressing.
  • Serve.
