Crispy Gluten Free Fried Chicken Breasts

Fried chicken is one of those recipes that just screams, ‘comfort food’. Comfort food is great, but a lot of the time it is far from being gluten free. But this gluten free fried chicken recipe can be enjoyed by those in your life with gluten allergies or sensitivities, which is a total win! These delicious nuggets of golden, crispy chicken can be enjoyed by themselves, with waffles and maple syrup, or my favorite – as a chicken sandwich like at KFC.

If you are serving these gluten free fried chicken breasts by themselves, try dipping them in honey. Which is my kid’s favorite way of eating them. If you want a delicious sandwich, serve it on a gluten free bun with mayonnaise, bread and butter pickles and lettuce. Or if you want a spicy chicken sandwich, serve with a sriracha mayonnaise and lettuce on a gluten free bun. There are so many ways to serve these. Gluten Free Fried Chicken

Crispy Gluten Free Fried Chicken

Ingredients
  

  • 6 Chicken Breasts

Marinade Ingredients

  • 2 cups Buttermilk
  • 1 Tbsp Smoked Paprika
  • ½ tsp Salt
  • ½ tsp Garlic Powder
  • ¼ tsp Pepper

Dredge Ingredients

  • 1 cup Bob's Red Mill Gluten Free 1 to 1 Baking Flour
  • ½ cup White Rice Flour
  • 1 Tbsp Smoked Paprika
  • 1 tsp Garlic Powder
  • ½ tsp Italian Seasoning
  • ½ tsp Celery Salt
  • ½ tsp Salt
  • ¼ tsp Cayenne Pepper (use more if you like more spice)
  • ¼ tsp Pepper
  • Canola Oil, for deep frying

Instructions
 

  • Stir the marinade ingredients together in a ziplock bag or a container with a lid. Place the chicken breasts in and refrigerate overnight or at least 2 hours.
  • Heat oil in a heavy bottomed skillet or dutch oven to a temperature of 350°F.
  • Mix the dredge ingredients together in a medium sized bowl.
  • Take the chicken breasts out of the buttermilk marinade and place in the dredge. Coat the chicken, place back in the buttermilk marinade, then back into the dredge mixture.
    HINT: use one hand for touching the wet ingredients and one hand for the dry ingredients.
  • Place on a plate, and repeat for remaining chicken breasts.
  • When the oil is to temperature, place the chicken breasts into the hot oil, ensuring they are not touching.
  • Fry for about 10 minutes or until the internal temperature is 165°. Fry times will vary depending on the size of your chicken breasts.
  • Remove from the oil and place on a rack until ready to serve (this is essential to avoiding your crispy coating from getting soggy).
  • Repeat until all of your chicken is fried.
