Easy Low Carb Pork Carnitas on Cheese Tacos

Life gets busy with kids; like really busy. And some days a big elaborate supper is not possible. So that is when the slow cooker comes out. These low carb pork carnitas are so easy. They make a great meal to throw together even in the busy rush of the morning. You just need to throw a few spices together, sprinkle it on the pork and then throw it in the slow cooker with some onions and lime juice. Then you can walk away and let your slow cooker do it’s magic while you go about your busy day.

These can be a little spicy for those that have a low tolerance to spice – such as my younger children. This is due to the chipotle powder. So if you want to tame it down a little bit, I suggest decreasing the amount of chipotle powder to one teaspoon instead of two. But if you like a medium spice to your food, you can leave it as it is.

Besides being super easy, these low carb pork carnitas are so versatile. You can add any or all of your favorite toppings. We have done the traditional taco toppings as well as mango salsa. And for a simple fresh taste, we did tomatoes, cilantro, green onions and feta with a chipotle cilantro cream. For the low carb option, we serve these on cheese tacos, which are actually very easy to make. Or you can serve them on any tortilla or taco shell that you favor. Pork Carnitas

  • 2 lb Pork Roast (a fattier cut such as a pork shoulder)
  • 2 tsp Dried Cilantro, crumbled
  • 2 tsp Salt
  • 2 tsp Chipotle Powder
  • 2 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • ¼ tsp Cumin
  • 2 Tbsp Lime Juice
  • 1 medium Red Onion, sliced

Chipotle Cilantro Cream

  • 1 cup Sour Cream
  • 1 tsp Chipotle Powder
  • 2 tsp Dried Cilantro, crumbled
  • 2 tsp Lime Juice
  • 1 Green Onion, chopped
  • Salt, to taste

Cheese Tacos

  • 3 cups Grated Cheese


Pork Carnitas

  • Mix together all of the seasonings and rub over the pork roast. Place in the slow cooker with the lime juice and onion. Put on high for 4-6 hours or low for 6-8 hours.
  • Shred the pork and place on a baking sheet. Put in the oven on broil for about 3-5 minutes or until slightly browned and crispy.
  • Serve with tacos and desired toppings.

Chipotle Cilantro Cream

  • Mix together all of the ingredients and allow the flavors to come together in the fridge for at least 30 minutes or overnight.

Cheese Tacos

  • Preheat oven to 375°.
  • On baking sheets lined with parchment paper place six circles of ½ cup of shredded cheese.
  • Bake in the oven for about 5-6 minutes or until browned and bubbly.
  • For a taco shell shape, hang the cooked cheese circles on a wooden dowel placed on two cups for about 5 minutes or until set.
