Easy One Pan Chicken Fajitas with Chipotle Cilantro Sauce

One pan dinners are so needed for a busy family. Especially when you are so sick of the pile of dishes that supper prep can make. And that is when these easy one pan chicken fajitas come to the rescue. They are so easy and so delicious!

The thing that I love about chicken fajitas is that you can serve them in different ways depending on your taste preferences. I usually like to serve them on corn or flour tortillas. But I also like to serve them with rice to make a delicious chicken fajita rice bowl. For both options, I like to serve with lots of cheese and my chipotle cilantro sauce. My kids like to have just salsa and sour cream with theirs. But either way, they are delicious and easy.

When I make my chipotle cilantro sauce, I use a chipotle powder. Which I have a really hard time finding at my local grocery store. So I always order it from Amazon. You can find a link below the recipe for the chipotle powder that I like to use.

What I like the most about making these on a sheet pan in the oven is that the vegetables get nice and roasted. I love a nice charred pepper – so tasty! You could definitely make these on the stove in a pan, but you will not achieve that nice char that you get from the oven. I suggest cutting your other vegetables – the onions and mushrooms – thick so that they do not get overcooked.

One Pan Chicken Fajitas with Chipotle Cilantro Sauce

  • 1 Red Pepper, sliced
  • 1 Yellow or Green Pepper, sliced
  • 1 Red Onion, Sliced
  • 4 cups Mushrooms, quartered
  • 2 cloves Garlic, roughly minced
  • 2 Jalapenos, sliced (remove the seeds for less spice)
  • 3 Tbsp Olive Oil
  • 1 Tbsp Fajita Seasoning


  • 3 Chicken Breasts, sliced
  • 1 Tbsp Olive Oil
  • 2 Tbsp Fajita Seasoning
  • 1-2 tsp Lime Juice

Chipotle Cilantro Sauce

  • ¾ cup Sour Cream
  • ¼ cup Salsa
  • 1 Tbsp Cilantro, chopped
  • 1 tsp Chipotle Powder
  • 1 tsp Lime Juice


  • Mix together the ingredients for the chipotle cilantro sauce and put in the fridge until ready to serve.
  • Preheat oven to 475°F.
  • Place the vegetables on a sheet pan lined with foil and drizzle with olive oil. Then sprinkle with fajita seasoning and stir. Place in the oven for 10 minutes. Stir.
  • Mix together the sliced chicken with olive oil and fajita seasoning. Place on the sheet pan with the partially cooked vegetables and return to the oven for about 5-8 minutes or until the chicken is cooked through with an internal temperature of 165°F (the timing will be dependent on how thick you cut your chicken).
  • Take out of the oven and drizzle with 1-2 tsp of lime juice. Serve!
