Summer brings in so many more options for fresh and light food. There are so many more reasonably priced ripe fruits to buy at this time of the year – including mangos. This fresh mango salsa is one that I have been making for years and it is always a hit. It is the perfect topping for your barbecued pork chops. Or the perfect summer dip with tortillas. It also makes a great side salad.
This recipe is very fast and easy to make. Mangos are combined with red peppers, jalapenos, red onions, lime juice and some salt and pepper. Once you have chopped up all of your ingredients you mix them together and put it in the fridge until ready to use. You could make this in advance as it will stay good in the fridge for a few days. But it is always best fresh!
Serving Suggestions for Fresh Mango Salsa
One of my favorite ways to serve this fresh mango salsa for supper is on top of pork. Pork always pairs well with fruit. I will put it on top of pork carnitas or barbecued pork chops. I also like to serve this as a side salad, but then I will double the recipe because my kids will load their plates up with this salad. It also makes a great appetizer dip, just serve with tortillas and you will have a very happy crowd. So serve it as a topping, a salad or a dip for a delicious and fresh summer dish.
- 2 Mangos, diced
- 1 Red Pepper, diced
- 1 Jalapeno, finely diced (remove seeds and membrane for less spice)
- 3 Tbsp Red Onion, finely diced
- 3 Tbsp Lime Juice, freshly squeezed
- Salt & Pepper, to taste
- Combine all of the ingredients together in a bowl.
- Cover and place in the fridge for at least 15 minutes.
