Ground Beef Wellington: Delicious and Budget Friendly

Some days you just want to treat yourself with a fancy meal. But it is hard to do on a budget. And that is where this delicious ground beef wellington steps in. It is full of decadent flavors with a budget friendly protein – ground beef. It is also fairly easy to make. Which makes it a great weekday supper to feed to your family.

A beef wellington is a flakey puff pastry covering a rich mushroom duxelle and a cut of beef. For this recipe we are using ground beef instead of an expensive cut of beef. You will season the ground beef and make equal meatball portions. The mushroom duxelle is a rich and decadent mixture of mushrooms, onions, herbs and bacon. It can be made with port, red wine or grape juice. Each of these produce great results. The duxelle, in my opinion, is what makes this recipe so delicious. So do not skip this integral part of the ground beef wellington.

I love to serve this with a side of beef gravy. This adds another layer of rich flavor to this amazing dish. As for side dishes, I like to serve garlic mashed potatoes (which is great with the gravy as well). And any other warm vegetable or salad, such as a creamy broccoli and bacon salad, would be great.

Ingredients
  

Duxelle

  • 5 slices Bacon, diced
  • 2 Tbsp Butter
  • 2 cups Mushrooms, small dice
  • ½ cup Onion, small dice
  • 4 cloves Garlic, minced
  • ¼ cup Port, Red Wine or Grape Juice
  • 1 tsp Dijon Mustard
  • 1 tsp Dried Basil
  • Salt & Pepper, to taste

Ground Beef

  • 1 lb Extra Lean Ground Beef
  • ¼ cup Dried Bread Crumbs
  • 1 Egg
  • 1 clove Garlic, minced
  • 1 Tbsp Dried Parsley
  • ¾ tsp Salt
  • ¼ tsp Fresh Ground Pepper

Puff Pastry

  • 1 sheet Puff Pastry, cut into 4 equal portions
  • ¼ cup Parmesan
  • 1 Tbsp Cream, Mealted Butter or Egg White

Instructions
 

Duxelle

  • In a pan over medium heat, fry bacon until crispy. Remove and reserve 1-2 Tbsp of bacon fat.
  • Add 2 Tbsp of butter to the bacon fat and melt. Sauté the mushrooms, onions and garlic until the onions are translucent.
  • Add port, red wine or grape juice, Dijon mustard, basil and salt and pepper. Cook until liquid is absorbed. Remove from heat and set aside to cool.

Ground Beef

  • Mix together all ingredients. And divide into four equal meatballs.

Assembly

  • Place 1 tablespoon of parmesan on each section of puff pastry. Equally divide the duxelle mixture and bacon on top of the parmesan. Place a ground beef meatball on top.
  • Carefully fold in each corner of the puff pastry around the ground beef, one at a time, until the meatball is fully covered.
  • Place on a well oiled baking sheet, seam side down.
  • With a knife, make an "x" on the top of the puff pastry. Brush with cream, melted butter or egg white.

Cooking

  • Place in a preheated 400° F oven for 30-40 minutes, or until golden brown and the internal temperature reaches 160°F.
  • Serve.
