Honey Butter Chicken Stuffed with Goat Cheese

These honey butter chicken breasts stuffed with goat cheese are absolutely delectable! I have been making them for years and I keep coming back to them over and over. So they are a tried and true recipe that has received many compliments. And I am confident that you will enjoy them just as much as my family does!

My husband is a honey and chicken man. Any time that I make chicken, the honey must come out as well. So these honey butter chicken breasts were a no brainer for me to make him when we were newly married. And he has stayed around for almost 10 years, so I must have done something right. Maybe it was these delicious chicken breasts? Who knows. So if your family likes honey and chicken, I highly suggest trying out this recipe.

I have tried this recipe with different flavored goat cheeses, which is nice for a change. But the best way to make them is with a plain goat cheese as the flavor doesn’t overpower the dish. And there is the perfect balance of creaminess with the sweet and sultry honey butter sauce. Also, if you can find garlic Ritz crackers, I suggest using those and omitting the garlic powder. It makes for an easier preparation and tastes just as great!

Honey Butter Chicken Stuffed with Goat Cheese

Coated Chicken

  • 4 Chicken Breasts
  • ½ cup Ritz Crackers, crushed
  • ½ tsp Garlic Powder
  • ¼ tsp Fresh Ground Pepper
  • 150 g Goat Cheese, cut into four equal portions

Honey Butter Sauce

  • cup Honey
  • cup Butter


  • Preheat the oven to 350°F.
  • In a small bowl mix together the Ritz crackers, garlic powder and fresh ground pepper.
  • Make a horizontal slit in the middle of each of the chicken breasts, ensuring that you do not go through the other side. You will essentially make a little pocket in each of the breasts. Stuff the chicken breast with your goat cheese and close the 'pocket'.
  • Spray a 9×13 pan with olive oil.
  • Coat the chicken breast lightly with the Ritz cracker mix and place in the prepared pan. Spray a bit of olive oil on top of the chicken breasts to ensure the crackers do not burn.
  • Place in the oven for 20 minutes.
  • In a small saucepan, melt together the honey and the butter.
  • Remove the chicken from the oven and pour half of the honey butter mixture on top. Return to the oven for 20-25 minutes or until an internal temperature of the chicken reaches 165°F.
  • Serve with the remaining honey butter sauce.
