Roasted Cauliflower and Garlic Mash: The Best Keto Side

One of the side dishes that I missed the most when I was on the keto diet was mashed potatoes. So this delicious roasted cauliflower garlic mash became the perfect substitute. If you have never roasted your cauliflower before mashing it, you must try it. I used to just steam it before mashing it, but roasting it first just raises the profile flavor. Which makes it so much more delicious and (almost) better than mashed potatoes.

This side dish is super creamy. To achieve this velvety creamy texture, you need to put the roasted cauliflower in a food processor. Cauliflower does not mash the same way that potatoes do. So please do not use a potato masher when making this cauliflower garlic mash. You will be so much more impressed with the final product if you use a food processor. As this is how you get that dreamy, creamy texture.

How to Serve

Mashed cauliflower goes well with anything. It is just as versatile as mashed potatoes. So even if you are not on a low carb diet such as Keto, you can still enjoy this as a side dish. It is a great addition into any meal plan. And your family may even like a substitute for mashed potatoes if it is something that you always serve.

I served this delicious side dish with my succulent stuffed beef tenderloin. And it was the perfect pairing. But as I said, it works great served with basically any protein. So choose what you want to serve it with, and make a delightful meal that your whole family will enjoy!

Mashed Cauliflower

Roasted Cauliflower and Garlic Mash

Ingredients
  

  • 1 head Cauliflower, chopped
  • 5 cloves Garlic
  • Olive Oil, for drizzling
  • Salt & Pepper, to taste
  • ¼ cup Butter
  • ½ cup Heavy Cream

Instructions
 

  • Preheat the oven to 375°F.
  • Place cauliflower and garlic on a baking sheet and drizzle with oil; mixing to ensure fully coated. Season with salt and pepper to taste.
  • Roast in the oven for 20 minutes.
  • Remove the cauliflower and garlic from the baking sheet to your food processor. Add in the butter and heavy cream. Process on high until a smooth consistency is reached.
  • Place in a serving dish and add more butter on top. Serve!
