Spicy Peanut Butter Chicken Soup with Black Beans and Potatoes

In Alberta you never know what kind of weather you are going to get in the spring. One day can be hot and sunny, and then the next day can turn very cold with rain or snow. And this spicy peanut butter, chicken and black bean soup is the perfect meal to make for those cold days.

This soup is very filling and is sure to warm you up. It is full of healthy vegetables, black beans, chicken and peanut butter. “Peanut butter in soup?”, you may ask skeptically. Yes, and it is wonderfully delicious! So do not omit it from the recipe because the peanut butter is what makes this soup so tasty.

I have been making this spicy chicken soup for many years, so it is a tried and true recipe. I have used both white potatoes and sweet potatoes with great success. Usually I will use white potatoes as that is what I always have in my pantry. But for a special treat, I will buy sweet potatoes and use them in this delicious soup. So if you are a fan of sweet potatoes, I would suggest that you try substituting them in this recipe. But as I said, both ways are equally delicious in my opinion.

Spicy Peanut Butter, Chicken and Black Bean Soup

Ingredients
  

  • 2 Chicken Breasts, diced
  • 2 ½ cups White Potatoes, diced
  • ½ cup White Onions, diced
  • 2 cloves Garlic, minced
  • 1 Jalapeno, diced fine
  • 1 cup Salsa
  • 1 can Black Beans
  • 7-8 cups Chicken Broth
  • ½ cup Peanut Butter
  • 4 Tbsp Olive Oil
  • Salt & Pepper, to taste

Instructions
 

  • In a heavy bottomed pot or dutch oven, heat 2 tablespoons of olive oil over medium heat.
  • Add the chicken and season with salt and pepper. Cook, stirring occasionally, until an internal temperature of 165°F is reached. Remove to a small bowl.
  • Add in the remaining 2 tablespoons of olive oil. Then add in the potatoes, onions, garlic and jalapeno. Stir and scrape up any brown bits. Saute until the vegetables are slightly tender; about 5 minutes.
  • Return the chicken to the pot along with the salsa, black beans and chicken broth.
  • Bring to a boil, then reduce to a simmer. Let simmer for 30-40 minutes.
  • Right before serving, add the peanut butter and stir until well incorporated.
