Sweet Cottage Cheese Buns: Delicious and Kid Friendly

Cottage cheese is one of those ingredients that you either love or hate. These delicious sweet cottage cheese buns are perfect even for those that do no like cottage cheese – like me. One summer we had a friend bring cottage cheese and peaches over for our kids to try, which was his favorite dessert. Our kids were not huge fans, so we had a lot of cottage cheese leftover. Because I do not like to throw out food, I had to come up with a way to use it. Thus, these sweet cottage cheese buns made it onto our supper menu. They have become a favorite in our house. And my oldest son always asks if I can buy cottage cheese so that we can make these. So cottage cheese seems to make it onto my grocery list a lot more than it used to (which was never).

We love to have these as a side dish to any soup – especially creamy ham and vegetable soup. Our kids love to eat these warm with melted butter and slices of cheese. They also love to have these for breakfast with eggs and bacon. These buns are the perfect addition to any meal. Ingredients
  

  • ¾ cup Cottage Cheese
  • ¼ cup Sugar
  • ½ tsp Vanilla Extract
  • 2 Eggs
  • ½ tsp Baking Soda
  • 1 tsp Vinegar
  • 1 tsp Baking Powder
  • 2 cups Flour
  • 1 Tbsp Heavy Cream
  • 1 Tbsp Sugar

Instructions
 

  • Preheat oven to 350°F.
  • In a small blender, blend together the cottage cheese, sugar, vanilla and the eggs.
  • In a small bowl, mix together the baking soda and the vinegar, then add the baking powder.
  • Add both mixtures to the flour in a medium bowl and mix.
  • Remove the dough onto a well floured surface and pat out into a rectangle. Cut the rectangle into 12 equal portions and roll into balls.
  • Place on a baking sheet with parchment and brush the tops with heavy cream. Then sprinkle the 1 tablespoon of sugar over all twelve balls of dough.
  • Bake for 20 minutes.
