The Best and Most Moist Meatloaf – Our Family Favorite

Meatloaf. A meal that I always dreaded as a kid. And maybe you did too. But this recipe is not anything like the meatloaf that I had as a kid (or that you may have had). This recipe makes a deliciously moist and flavorful meatloaf. Because of this, it has become a family favorite!

The key to a moist meatloaf is your meat mixture. So if you do not want a dry one, please do not skip on adding the ground pork. When you add ground pork to the ground beef you are adding in the extra fattiness that you need to keep your meatloaf from drying out. You also do not want to over mix. Because again, if you do, you will end up with a drier version of this amazing meatloaf.

One of the reasons why our family loves this recipe so much is because it is made with corn chips (and served with a side of corn chips in our house)! And in my opinion, any meal that has chips in it is a winner. When I asked my oldest why she liked this meatloaf, she answered, “Because it tastes so good!”. So this delicious meatloaf has the ‘tastes good’ seal of approval from children. I hope that your children will say the same!

Serving Suggestions for this Moist Meatloaf

When serving this recipe to your family for supper, I would suggest a carb and a vegetable for a hearty meal. You can serve extra corn chips, mashed potatoes or a warm potato salad for your carb. And you can serve any of your favorite green vegetables as a side dish. Some of our family’s favorites are steamed broccoli, creamy broccoli and bacon salad or a quick and easy pre-packaged salad.

Ingredients
  

Meatloaf

  • 1 lb Ground Beef
  • 1 lb Ground Pork
  • 1 ¼ cups Corn Chips, finely crushed
  • 1 cup Green Onions, sliced
  • cup Chili Sauce
  • 2 Eggs
  • 1 Tbsp Chili Powder
  • 1 ½ tsp Salt
  • 1 tsp Pepper

Topping

  • cup Chili Sauce

Instructions
 

  • Preheat oven to 350°F.
  • Mix all of the meatloaf ingredients together, ensuring you do not over mix.
  • Place in a greased loaf pan. And pour the reserved chili sauce on the top of the loaf.
  • Place in the oven for about 1 hour and 25 minutes or until an internal temperature of 160°F is reached.
  • Remove from the oven and let rest for 10 minutes before slicing.
  • Serve with extra chili sauce and corn chips!
