Best Creamy Warm Potato Salad Packed with Flavor

In my opinion, the best way to serve potato salad is warm. So if you have never tried warm potato salad, you must do it now. This creamy warm potato salad is truly delicious because it is packed with flavor – garlic, dill and a hint of horseradish. And it has feta! I love when feta gets baked because it crisps up on the outside and gets all gooey in the inside. So delicious! You will love it too.

This is one of my favorite side dishes as it can go with pretty much anything. I love to serve it with Whiskey Molasses Ham. So plan your main and add a creamy warm potato salad to the table. Your family will thank you!

Warm Potato Salad

  • 1 ½ lbs Potatoes, cubed
  • 1 can Peaches & Cream Corn
  • ½ medium Onion, diced
  • 1 ½ Tbsp Olive Oil
  • ½ cup Feta, cubed
  • 4 slices Bacon, cooked & crumbled
  • 4-5 cloves Garlic, whole

Salad Dressing

  • ¼ cup Sour Cream
  • ¼ cup Hellman's Mayonnaise
  • 2 tsp Creamy Horseradish
  • 1 tsp Lemon Juice
  • 1 ½ Tbsp Fresh Dill, chopped
  • Salt (to taste)
  • Pepper (to taste)


  • Preheat the oven to 425°
  • In a bowl mix the potatoes, corn and onion. Drizzle the vegetables with the olive oil; season to taste with salt and pepper. Toss to mix, then place on a baking sheet.
  • Place the garlic cloves in some foil and drizzle with olive oil. Close up the foil to make a little packet and place on the cookie sheet with the vegetables.
  • Bake in the oven for 20 minutes.
  • Remove the garlic packet, and flip the vegetables. Spread the feta on top and return to the oven for another 15 minutes, ensuring the potatoes are cooked through.
  • To make the dressing, mix together the sour cream, mayonnaise, horseradish, lemon juice, and dill. Then take the garlic out of the foil packet, mash it with a fork into a puree and then add it to the dressing. Season your dressing with salt and pepper to taste (remembering that the bacon will add salt as well).
  • Once the vegetables are cooked, add them to the dressing along with your crumble bacon and mix.
  • Serve and Enjoy!
